IIGht, tonight I made homemade tomatillo enchilada sauce and pulled chicken enchiladas. This was another unconventional recipe that I pulled out of mi arse, so if you want real enchiladas just fucking google it or duck duck go it, or AI it, Jesus Christ. The queso I was gonna use was bad, and I only had mozzarella so I used that. It was kinda good and made an enchilada za, so thats what I am calling it.
For the sauce, boil tomatillos for 5 minutes. Meanwhile I toasted a few dried guajillo and arbol or ancho chiles on a stainless steel pan (I think thats what they were). Speaking of which, you should only be cooking on cast iron or stainless steel, also ceramic for certain things. For the love of God do not use teflon or any material where you can’t Immediately trace it to the periodic table. Dont cook with acids on cast iron, because iron will leach into food. Make sure it is well seasoned, which means it has a nice oil coat. I have first hand experience with teflon because it is a coating we use to protect rocket thruster parts that I make for a job. Its gross. Tis no good. Stainless is good for the acidic type foods. Also, teflon flakes after like two years, you can have a stainless steel or cast iron pan for decades if you take care of it. So, why would you cook on something that you need to buy every few years that kills you when you can invest in cookware that does not. For ceramic, just make sure that its not shitty coated.
Back to the sauce, toast the dried peppers for a minute per side then throw them in a bowl or pan with hot water, a few cups. Let them rehydrate. If tomatillos are done (5 mins) drain boiling water. Cut up an onion and garlic and cook in same pan in ghee that you used for chiles for a few. As the pros say “until translucent and fragrant”. Add all to a food processor with a touch of olive oil, a dash of cumin, a dash of smoked paprika, dried oregeno, a wee bit of cinnamon, salt and pepper. Boom-dank sauce.
Cook chicken in same pan until pretty much done. shred chicken in a bowl. Make enchiladas. This time in particular, I used the pulled chicken, fresh banana peppers, onion and cheese on inside. Then put the enchiladas in the same large stainless pan and covered in the sauce and cheese. Cook on a burner on med-low, covered for 15 mins. (My oven is broken at the moment). Or cook in oven at 375 for 15-20 then uncovered for another 5-10 until done. Eat it. Use cilantro if you think it does not taste like soap.
Speaking of which, its odd that genes can cause people to think cilantro tastes bad. In biology, I once learned that lactose tolerance is basically a learned genetic feature found in northern europeans that is more than 10,000 years old. This means that animal husbandry and domestication, as far as we can tell, started in northern europe 10,000 years ago and likely came about with quick adaptation. It is odd timing due to the end of the pleistocene epoch occurring around the same time. I subscribe to a theory that I want to save for when I make Morocaan cous cous bake, but heres a little teaser.

The North african thing will come into play and tie things together.
When people think of the invention of the wheel they think of ancient Sumerians, but oldest wheel for transportation vehicles ever found were excavated in northern Europe. Furthermore, if the climate changed drastically, which caused the northern Europeans to flee their homeland because of the massive flooding of the northern ice sheet at the end of the pleistocene, it would make sense that these “europeans” fled south through the seas to the mediterranean and Iraq area. The northern landscape would have been washed away to bedrock, so it makes sense that they had to use animals and quickly learn agriculture for survival, if they did not already know these things. The use of pine needles from evergreens act as a great way to cover the landscape with bedding quickly, which they could have used to their advantage to quickly learn these things. Suemrians, the book of enoch, Aztec myth, and many more talk about people coming from the northern sky who brought agriculture, civilization etc. to them. Below are pictures of a Phonecian boat and a Viking boat, both used dragon symbolism. Pretty similar. The hypothetical proto-indo-european language connects all language. These historical sea faring peoples might have all been the same peoples just at different times. Hitler was onto something (jk). Also look into haplogroup X. Anyways, this post might be confusing because I am quickly going through 5000 years of theoretical history. I hope you enjoy the enchiladas. Mine were surprisingly good. Sauce was especially good.
