Crying Tiger, Sinusoidal Dragon

Alrighty folks, this might be the most tistic shit ive done yet! You see, I really like “Crying Tiger” from Thai places. That sauce is really good and im the sauce boss. I wanted to try to make Crying Tiger, but I wanted more than just a steaks worth. So I decided to buy a Sirloin Tip roast instead. I ordered some roasted rice online (Khum Shine) and I am going to try something unconventional here.

Typically Crying Tiger is a grilled steak thats served with a dipping sauce and sticky rice. The sauce is a combo of fish sauce 2 tablespoon, toasted rice powder 1 tablespoon, thai chiles (dried) a bit, palm sugar of whatever sugar 1 tablespoon, 2 limes juiced , maybe some cilantro stems, and maybe some green onions or spring onions or shallots, and some garlic. Im sure theres a better way but thats all I got.

What I am doing differently is that since I bought a roast, Ill braise instead of just grill individual steaks. I feel like the best way to get tender meat will be to sear it and braise it. This is dumb, but my rice powder has arrived from amazon so Imma try it because I am impatient.

Alright so what I did what I chopped my 5 pound sirloin tip roast in half and poked some holes. Fill a bag with marinade, which will be garlic, ginger, soy sauce, oyster sauce, fish sauce, thai chiles, ground white pepper, and some dried thai chiles. Put it in bag and marinade overnight.

So heres the plan-after a day of marination, take out roast, let it sit out on a cutting board for 1/48th of a full day, or 1/672 of a fortnight. Heat up a dutch oven or a cast iron pan with ghee. Sear the shit out the meats on all sides about 2-4 minutes per side depending on heat and size. Take out shit. Add about a quarter onion phat chopped, it’ll be wasted anyways its just for the braising liquid. Cook until you can kinda see through it and it smells like onions. Added a bit of kakaraot, chunked in big pieces. Add garlic and ginger. Cook for 1/10080th of a fortnight. Then as the pros call it, you deglaze. Which means add liquid, somewhat acidic in most cases, but in this case- I took the marinade that I used and dumped that shit in the dutch, scrapped all the black goo away (black goo) and then heat it up. Then I added more soy boy sauce and about a cup and a half of water (This is probs better than beef stock or broth for this recipe because theres already a ton of flavor.).

I am typing this as im cooking so idk how thisll turn out but it smells really good.

Then, add back the seared sacred cow and nestle it in that joyous fragrant soystrogen.

It should look like this.

Bring to boil, then turn to low and cover for about 2-3 hours. More time=more moist and floppy=better, but the hero in this dish is the Nam jim Jaew (dipping sauce)- which, while this is cooking, make it. Ingredients above, look up the measurements, but the spiciness and tanginess is mostly preference so adjust accordingly and learn from your mistakes.

Also, meanwhile, since this cooked for a long time on a weeknight, I made Thai asparagus Appe(tizer). Basically doubled up the sauce and threw some garlic and ginger in a stianless pan, then threw the asparagus in for a few minutes, then topped with sauce and cooked for another few. Threw about 2 cups of rice in rice cooker, and served the Thai asparagus with rice until shit went down in the dutch ov(en).

Meanwhile, I want to talk about climate change. I want to preface, the climate is changing!!!!!! But it always has and always will.

Check that out, the ol hockey stick graph is bullshit, because data is manipulated and it never accounts the mediaeval warm period. This is for reason I can explain through SCIENCE, and I will eventually, but I have been cooking for hours and dont feel like it. Maybe if more people view these posts itll be worth it. This doesnt mean that the climate isnt changing, it is, but the reasons might be different then you might think. Fist, the Sun, which I detailed in a previous post, influences geomagnetism, geomagnetism affects the pole/dipole reactions within our crust and ionosphere, this, furthermore, influences the tectonics the the North American Craton. This also influences the sky, it charges the particles in our upper atmosphere, which affects weather. It also cause volcanic eruptions (dragon), due to its influence on the plasma center of our earth and its wave formation within our deep crust. The reason why weather has been strange this year is due to the Tonga eruption and man made or geomagnetic induced forest fires in canada and across the northern continent. The earth and the cosmos will influence the climate much more rapidly, cyclically, and influentially than anything we are spewing out.. Although I agree, lets work on inventing systems that are more earth friendly, but the idea that taxation or legislation will stop mother nature is ignoramus, because eventually father time will reset his watch (gay)

Notice how the atmosphere changes just prior to the reaction in some of these eruption views. Goes with my points.

Heres another thing, if CO2 goes beneath a certain ppm, plants die, we are dangerously close to that ppm. Carbon is not inherently evil, those fucks north of Richmond are. End rant.. For now. Let us care for Earth, but also lets not destroy civilization in the meantime. If climate change people were not in it exclusively for money and power and they actually thought humans would die, then they are homocentric morons. The Earth will live on, animals will adapt and prosper. I on the other hand am not worried about it, because I believe in human ingenuity and our ability to survive. We have done it before at the end of the Pleistocene we will do it again. This might make me sound right wing or conservative, but I am not. I am not concerned about left of right, I am concerned about up and down (THE DRAGONS).

Once that shit is braised to perfection, take meat out. Put under foil for a bit, then thinly slice. Serve with (sticky) rice and the sauce and dip it in the sauce and eat with hands. It actually turned out better than I thought. Not worth it though. braising a sirloin roast is more time consuming than just grilling a marinaded steak outside. I just like the challenge and Im retarded.
