Oat fellas. I went on a great trip to MOAB, the land of giants. Before I cooked a dank isle of Phil of filipino dish called adobo carnitas or something. Cant remember what I did, but as promised I will post. Here is the AI generated dish that is somewhat similar to what I made but different. Regardless, enjoy.
For the Pork Carnitas:
- 2 pounds of boneless pork shoulder, cut into chunks
- 1 onion, finely chopped
- 4 cloves garlic, minced
- 1 bay leaf
- 1/2 cup soy sauce
- 1/4 cup vinegar (preferably cane vinegar)
- 1 teaspoon black peppercorns
- 1 teaspoon brown sugar
- 2 cups water
- Cooking oil, for frying
For the Adobo Sauce:
- Reserved marinade from the pork carnitas
- 1 tablespoon cooking oil
- 2 bay leaves
- 1/2 teaspoon black peppercorns
- 1 onion, sliced
- 4 cloves garlic, minced
- 1 cup coconut milk
Instructions:
- Marinate the Pork:
- In a bowl, combine the soy sauce, vinegar, minced garlic, black peppercorns, and brown sugar. Mix well.
- Place the chunks of pork shoulder in a large zip-top bag or a container with a lid.
- Pour the marinade over the pork, ensuring that it’s well-coated.
- Add the chopped onion and bay leaf to the marinade.
- Seal the bag or container and refrigerate the pork for at least 2 hours or overnight for best results.
- Cook the Pork Carnitas:
- In a large pot, add the marinated pork along with the marinade, water, and bring it to a boil.
- Reduce the heat to a simmer, cover, and cook for about 1.5 to 2 hours or until the pork is tender. Stir occasionally and add more water if needed.
- Once the pork is tender, remove it from the pot and set it aside.
- Make the Adobo Sauce:
- In a separate pan, heat a tablespoon of cooking oil over medium heat.
- Saute the sliced onion and minced garlic until the onion becomes translucent.
- Add the bay leaves and black peppercorns.
- Pour in the reserved marinade and bring it to a boil.
- Add the coconut milk and simmer for about 10 minutes, stirring occasionally until the sauce thickens.
- Crisp the Pork:
- Heat cooking oil in a frying pan over medium-high heat.
- Carefully place the cooked pork chunks in the hot oil and fry until they become crispy and browned on the outside. You can do this in batches if necessary.
- Serve:
- Place the crispy pork carnitas on a serving plate.
- Drizzle the adobo sauce over the carnitas.
- Garnish with chopped cilantro or green onions if desired.
- Serve with steamed rice or warm tortillas.
I was at a bachelor party with my buddy dole and all of my best friends. Therefore I par”took” in a lot of bevies. I searched for bones and threw rocks at other rocks this weekend. I saw a rock that looked like a large flaccid penis and wondered, what if rocks are just petrified giant bones and/or trees? Check it bitch.
This guy is a lunatic but I love him. Disclaimer-I do not believe this, I just like the idea. The proverbial titan who now lay dormant upon the earth and turn to stone. The Giants sons or the nephilim who fell like fallen angels from the sky onto earth and fucked our bitches. The west, in Moab, among others, and that area where hopis say that the ant people came from the ground, all during the flood. They sprouted from the ground and saved those who were left. In other myths there were those that came from the sky and those from the sea. All proclaimed to be giants of some sort. Utahs (Judah) landscape looks flowy. A previous flood that caused massive waves where the remains left arches, sand hills, and massive channels. Under-fit rivers and apparent waterlines that go up the massive cliffs. The idea of gradualism is gay, its not one drop of water and one grain of sand. There is always order then chaos. Its cool if you look on google earth, both utah and the cumberland gap look like it was flooded and both have the largest amount of arches on earth (or at least US). Cataracts, ripples, eddys and arches. Life is a highway, but highways are a human contruct that would be destroyed by a deluge. And the giants that existed are what still remain as our landscape.

Enjoy and don’t get me started on BONES-next time, for another recipe.
Best,
Corn
