Audible! Mexican Meatball Soup-Broth Pt 2

Alrigggghty boys, I was supposed to make a greek Youvarlakia Avgolemono meatball soup which is lemony meatball greek soup with an egg type sauce thats actually pretty dank. Turns out that after making the meatballs, I fucked up grocery shopping and thought I bought more things, but I did not buy those things. Quick audible with some canned goods and what I had in the fridge and I decided on a Mexican style soup that is kind of like chili. Not my best overall bc I did not plan this, but it was still pretty good. I have never made anything bad before, so if its not good, it is your fault.

With the meatballs, I used ground beef, bread crumbs, rice, a few garlics, an egg, cumin, pepper, salt, paprika (hot), fresh cilantro from garden, and grated onion. I accidentally added a little of this lemon pepper mixture because I thought I was doing something else, so leave that out. Mix it and make meatballs. If you want to brown the meatballs, go for it, they might break apart if not careful. To do so-Brown the meatballsand remove them.

Next, due to the limited amount of shit in the fridge, I was only able to chop up some celery, garlic, onion, shallot, and jalapenos. I also had 14 oz diced tomatoes and canned diced green peppers (4oz). (After contemplation, if you deep fried shallots in ghee and served as a topping, would have been good). Lastly I thought it would be good on rice and I had arborio rice in cabinet to use. Cook all the veggies except garlic and canned goods for a few minutes, (in dutch oven or pot), on olive oil. Then add garlic for a minute. Then add 1.5 cups of arborio and toast the rice for a minute or so. Then add the tomato and diced green peppers. Finally, add a few cups (4) of the beef broth you made the other day (((if following along) you’re not) use store bought).

Bring to a boil while stirring occasionally. Once boiling, add back meatballs, cumin, paprika, Ancho chili power, hot sauce or whatever your taste desires. Simmer for somewhere between 10-20 minutes depending on how much broth you put in, how much rice, and how big the meatballs are. Just cook the meatballs so they arent raw.

While it is cooking, I have cooked up some new info that might intrigue you. It is spicy like this soup. I have been following solar weather for a long time. Also, I have been learning about electricity by helping replace electrical in a n old van my GF bought. Just this past weekend we had a very extended solar flare that exploded instead of imploded (implosion has been usual for awhile), see this at 13 seconds of video in southwestern limb, or bottom right.

Last on this point since this is an early post… I am a catastrophist, rather than a gradualist. I think that catastrophism can be close to proven in biblical stories, geology, mythology, and through other sciences. Modern academic dogma tends to veer away from catastrophism too separate the new religion of science from mythological stories, abrahamic religion, and ancient religions. I think it is short sighted and ignorant. When I bring up these things, I am not saying they will happen tomorrow, but to say that they have not happened and that they will not happen again is straight retardation. I am trying to help you pierce the celestial veil like Percival, ask the right questions and think critically (schizophrenically)- All while cooking good food.

Once you have recognized and pondered on our impending doom, taste rice to make sure its cooked after about 12 mins, and also taste your food and add shit if you do not like taste or want more seasoning. Use the instinct that God gave you and figure it out. Once it is done and tastes good its good to go. Serve in a bowl and enjoy your audible mexican chili soup rice. You can serve with cheese, jalapenos, green onion, cilantro, sour cream, limes, etc as garnish or toppings.

Like I said, this recipe is good, but not fantastic. But this just shows what you can do when you create something new on the fly!
